Welcome

Welcome to my blog. I am just an average middle age lady who decided to start running and exercising eight years ago. I share my experiences with nutrition, exercise and sometimes life. Why the name Fit Warrior? I want to be fit and I want to be a warrior for God. I love to run and I love Crossfit. I am not the best at either, but I don't do it because I am the best... I do it because I like it. I am 46 now and I want to live a long healthy life to enjoy my children's children. My kids are grown, the youngest in college, so I run, Crossfit and look to challenge myself. Life is that simple... now:)

Chipolte Black Beans

Serves: 4 to 6

Ingredients

1 tablespoon oil
½ cup chopped yellow onion
2 garlic cloves, minced
2 cans black beans or 4 cups cooked black beans (from about 1½ cups dried)
1 chipotle chile pepper in adobo sauce, chopped *optional
1 cup vegetable broth
1 dried bay leaf
1 tsp ground cumin
½ tsp dried oregano
½ teaspoon salt
¼ tsp ground black pepper
½ lime, juiced

Instructions

In a deep skillet or small dutch oven, heat oil on med-high heat. Add onions and sauté until translucent, about 5-7 minutes. Add garlic and continue to cook until fragrant, about 30 seconds more.
Add all remaining ingredients, except for the lime juice, and stir to combine. Cover and cook on low, simmering, 25 minutes. Stir in lime juice.
To thicken sauce, purée about ¼ to ⅓ cup beans using a few pulses from an immersion blender. If mixture becomes too thick, add more water or vegetable broth.

Lindy's Goals

Goals should include long and short term. Never make a goal that is unattainable, you only fail. Goals can vary and guess what... you may not reach every goal.

Goals for 2015

1. Lose 10 pounds.... current weight is 145lbs

2. Complete my third Marathon.

3. Run Half marathon this year in under 2:00.

4. Run a 5k in 25 minutes and run a 10k in 55 minutes.

5. Incorporate Speed Drills in my running program.

6. Keep my fitness journal consistently for one year.

7. Do Chest to bar pull ups consecutively.

8. Beat my sugar addiction... I love sugar anything and I want to control it so it doesn't control me!

9. Learn to do something new...like play the piano or guitar or teach a class.
