Chipotle Black Beans  (The Green Fork Blog)

Ingredients
  • 1 tablespoon oil
  • ½ cup chopped yellow onion
  • 2 garlic cloves, minced
  • 2 cans black beans or 4 cups cooked black beans (from about 1½ cups dried)
  • 1 chipotle chile pepper in adobo sauce, chopped *optional
  • 1 cup vegetable broth
  • 1 dried bay leaf
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ½ teaspoon salt
  • ¼ tsp ground black pepper
  • ½ lime, juiced
Instructions
  1. In a deep skillet or small dutch oven, heat oil on med-high heat. Add onions and sauté until translucent, about 5-7 minutes. Add garlic and continue to cook until fragrant, about 30 seconds more.
  2. Add all remaining ingredients, except for the lime juice, and stir to combine. Cover and cook on low, simmering, 25 minutes. Stir in lime juice.
  3. To thicken sauce, purée about ¼ to ⅓ cup beans using a few pulses from an immersion blender. If mixture becomes too thick, add more water or vegetable broth.

Lindy's Banana Nut French Toast- I made this up to satisfy my sweet tooth and it has around 340 calories so it is a good breakfast choice. I beat one egg and sprinkle some cinnamon. Then I use the 100 calorie thin bread and dip in agg mixture and place in frying pan and cook like french toast. Once cooked I use a 1/2 tsp of butter on each slice, 1/2 teaspoon of honey on each slice. Next cut up half of a banana on put on top and sprinkle w/ a few walnuts (tblsp). It ends up around 340 calories and it is awesome.

Kale Chips- I found these on the Fit Mom's Blog (website is on my favorite blogs list)... but recipe is gone from the site. Easy to make... Cut stem from kale, shred kale leaf in pieces, toss with olive oil (not much 1 tbsp depending on how much kale you have) and sea salt (probably could use other seasonings). Bake at 350 degrees on cookie sheet till crisp, may be 10 minutes... no more. These are awesome and her kids loved them too. I made them and they are great with a sandwich or just a snack. These helped my saly craving and made me feel like I was cheating!
